IN AN effort to ensure that his business produces the freshest baguettes in Guernsey, Reda Karim has invested €60,000 in a new bakery machine.

Imported from France, the Bongard machine reduces the time that it usually takes to produce baguettes, rolls and bread from a typical day-and-a-half to just 30 minutes.

The Boulangerie Victor Hugo owner said it was a terrific piece of equipment – fewer than 70 are in use in France – and would finally ensure that his baguettes were like no others in Guernsey.

'It's impossible that anyone else in the Channel Islands will have a machine like this. Firstly, because it's very new and secondly because it is a massive investment and I'm crazy enough to pay it,' said Mr Karim.
