The first set was settled by a single break of the Evans serve in the ninth game.
The second set opened with four consecutive service breaks before reverting to type.
Evans, originally from Derbyshire, led 40-0 on the Ogier serve at 4-3 but Sarnian served his way out of trouble and then Evans had three separate set points at 6-5 before Ogier held again.
The resultant tie-break started with Ogier (pictured) taking the first two points before Evans levelled, but at 3-4 Evans lost both his service points before Ogier fittingly finished with an ace down the middle.
Evans evened matters up in the doubles final when he partnered Mark Gilmour to victory over Ogier and Chris Hickling.
The two Jersey coaches eventually broke after 10 games and then dominated matters against the Guernseymen.
Ogier then bounced back to win the 'decider' against Evans when he and Kirsten McArthur won the mixed in a shoot out against Evans and Karen Barnes.
Hickling had the satisfaction of winning the over-35s with Rob Hannah against Jersey veterans Mark Connelly and Ian Morgan.IFM Jersey Senior Open: Island Games gold medallist wins again
