The island's number one topped the bill in front of a sell-out crowd that went wild when he came into the ring shortly after 10.30pm on Saturday night.
And the cruiserweight did not disappoint as former Ulster champion Jardine had no option but to sit down in the corner midway through the second round after taking a number of thundering body shots.
It was a new tactic from Jennings to see him attack the body so much.
'I've been working on some combinations to the head and then switching downstairs,' said the 32-year-old afterwards.
Jennings (pictured) said that he dedicated the win to his good friend Craig Cameron, who died suddenly a couple of weeks ago.
'He was a keen boxing fan and he'll be well missed,' he said.
