The coach (pictured) and 10 of his players were stranded at the airport for five hours on Sunday before they could take off.
Players from rival club Beeches stood in for the Sarnians when the match got under way at the arranged kick-off time of 1pm.
But by the time the remaining Saints players got on the pitch after 15 minutes, they were 7-0 down to Wanderers who had not won a match in two years in the JRA League.
The defeat was also particularly galling for Griffiths considering it was his team's first of the season and they were second in the table.
'We were given an ultimatum by the Wanderers captain that kick-off would go ahead at 1pm, regardless that half our team including myself would probably still be stuck in Guernsey due to the fog,' said Griffiths.
'As this eventuality did in fact transpire, it came as no surprise to me to find us 7-0 down by the time we arrived pitch-side and that with such ill preparation we performed well below the high standards we have be setting so far this season.
'We are all absolutely gutted by the outcome and the result of this game will be swept under the rug and forgotten about immediately due to the farcical nature and turn of events.'
