The Guernsey star won 7-6 6-2 against the world number 62 to go a step further than she has ever gone before, booking her maiden fourth round spot in what is her 43rd appearance in the main draw at a major.
The 30-year-old had not reached the third round of a slam since 2017, but is now enjoying the run of her life at the All England Club.
She played her best tennis as she raced into a 5-0 lead in the second set before eventually seeing out the match in a close-fought finale.
Watson will now face Jule Niemeier of Germany - ranked 97 - for a place in the quarter-finals.
