The Guernsey player fought back from a set and 4-1 down to triumph against Arantxa Rus, who at No. 75 is 40 places above Watson in the world rankings.
The 29-year-old Sarnian eventually got past her Dutch opponent 6-7 (5), 7-5, 6-4 in a match lasting 3hrs 26min.
It was Watson’s first victory in the main draw of the tournament since 2016, when she reached the fourth round.
The British number three will now face Ukraine’s Elina Svitolina, the 15th seed, in the last 64.
