The 18-year-old Sarnian, who is looking to add to her junior gold medal from two years ago, dropped only 15 points in the match as she set up a last-16 clash with home player Poojashree Venkatesha, world number 464, more than 250 places below Watson.
Beyond that, she could face Australian top seed Anastasia Rodionova in the quarter-finals, although she will now be flying the Guernsey singles flag alone after Patrick Ogier's demise.
Starting his match against third seed Matt Ebden as massive underdog, Ogier fought bravely before falling 6-3, 6-2.
