Vraic reaches ‘far beyond seaweed’ for SquareMeal

The fine-dining establishment on the edge of Chouet Bay, which only opened last summer, was praised by independent restaurant review website SquareMeal in its selection of the nation’s best restaurants outside London.

‘To bill Vraic simply as a “seaweed restaurant” is a criminal reduction,’ it said.

‘Davies wields kelp, dulse, and bladderwrack not to rock the boat, but as tools for intensity.

‘Here we have a chef as confident with subtlety and nuance as he is with power and punch. Seaweed may be the headliner, but Vraic reaches far beyond.’

Head chef Nathan Davies said he and his team were ‘super proud’ just to make the list.

‘Being number four is an incredible achievement in such a short space of time,’ he said.

‘To be able to put a restaurant from Guernsey on this list would not be possible without the hard work and dedication of our team, and the support of guests, suppliers, farmers and producers that we work so closely with. While being incredibly proud and excited to be amongst the best restaurants in the UK, it is still extremely important for us to keep our feet on the ground and continue to work to improve the restaurant within the community.’

Zoe Gosling from Visit Guernsey said this was fantastic recognition for the team at Vraic, and great news for the island: ‘Especially in a year where we are launching the Big Eat, pitching the islands as a must-visit destination for food lovers,’ she said.

‘We know visitors are travelling specifically to eat in Vraic, something that benefits the whole island economy. All of which puts us on the radar for those who may not have considered Guernsey as a holiday destination before.’

Further prestigious accolades could be coming the restaurant’s way with new Michelin stars due to be awarded early next month.

Vraic has been mentioned as a name to look out for at the ceremony by celebrity chef Tom Kerridge, who holds two Michelin stars himself. The restaurant has already achieved Michelin recognition after being included in its 2025 guide, where it was described as ‘the very definition of a destination restaurant’.

The island has been without a Michelin star since 2009 when ‘Christophe’, located in the Fermain Valley Hotel’s upper gardens, closed its carte du jour for the final time.
