Guernsey butter was previously available in only a limited range of Waitrose stores as regular supplies could not be guaranteed.
However, changes at the dairy have created opportunities to increase its butter production by around 32,000kg per year, which equates to around 125,000 packs of butter.
The move will increase Guernsey butter sales by about 15%.
‘The dairy is now able to increase the production of Guernsey butter by means of the milk and cream that would previously have been used to make cheese,’ said Guernsey Dairy’s operations director Andrew Tabel.
Local cheese production ended in December to free up space at the dairy.
The increased production of butter will safeguard local demand and create new commercial opportunities through butter exports.
‘Not only will this boost total butter sales by around 15%, but it will also increase the visibility and popularity of Guernsey Dairy products nationwide whilst promoting the island overall,’ Mr Tabel said.
Waitrose is looking to make it available to its customers from next month and online via its website.
